The low-down: Cake designer and baker extraordinaire Sherry Sawatzky has perfected the art of unfussy wedding cakes inspired by nature (bonus: she uses fresh ingredients with no artificial flavours or colours). From fresh flowers and foliage to textured buttercream, these creations are perfect for the simple bride.

Most unique flavour: Saskatoon Berry Cream, a rich vanilla cake filled with the province’s most iconic berry (they look like blueberries but taste more sweet and nutty) and layered with a vanilla cream cheese frosting—this flavour is so prairie chic.

The low-down: With locations all across Calgary, Edmonton and Saskatoon, this staple West coast bakery started with sisters Jodi Willoughby and Carolyne McIntyre Jackson. They proudly use their grandmother’s chocolate cake recipe and their mom’s vanilla cake recipe, so you know their desserts get the stamp of approved from all generations.

The low-down: Inez Sanche is the confectionary mastermind behind Almost Heaven, an at-home wedding cake business. (She’s been making wedding cakes for over 20 years.) All of her designs are custom made, including the flavours and the decorations, so no two cakes will ever be the same.
