Raising The Bar
You would think that the in-demand proprietress of a wildly popular Vancouver hot spot might want to unwind after a queue-snaking-out-the-door shift with a good read or a meditative yoga class. Not Bao Bei Chinese Brasserie's Tannis Ling. Her latest extracurricular activity involves taking on, oh, just the reinvigoration of an entire neighbourhood, starting with the Chinatown Night Market. She’s intent on shaking up the traditional Chinese market, trading its “underwear, cellphones, knock-off bags and DVDs” for mouth-watering street food, outdoor film screenings, live bands and traditional kite-making for kids. Ling, who burst on the cocktail-revival, noodle-bar scene with her award-winning restaurant just before Vancouver’s Olympics, happily inhabits the duality of being both nostalgic and forward-looking.
